East Meets West Pork Roast
This recipe can also be made with these exciting barbecue sauce flavors:
- 1-1/2 cups KC Masterpiece® Original Barbecue Sauce
- 1 boneless pork loin roast (about 3 pounds)
- 2/3 cup chopped onion
- 1/4 cup lemon juice
- 2 tablespoons soy sauce
- 1 tablespoon fresh grated ginger
- 3 cloves garlic, pressed
Set roast in large bowl. In small bowl combine remaining ingredients. Reserve 1/2 cup of this marinade for basting during grilling and for brushing after cooking. Pour remaining marinade over roast; cover and refrigerate to marinate 12 hours or longer. Bring to room temperature and discard used marinade.
Place roast on grill over drip pan surrounded by medium hot coals (about 25 per side). Barbecue 50-60 minutes, or until internal temperature reaches 150°F, turning twice and basting with 1/2 cup reserved marinade during last 10 minutes. Remove from grill; brush generously with remaining reserved marinade. Cover and let stand 10 minutes. Cut slices and arrange on bed of cilantro or parsley. Spoon juices from roast over slices.
Makes 6-8 servings.
