Turkey Apple Quesadillas With Creamy Pumpkin BBQ Sauce

Ingredients

  • 1 tbsp butter or vegetable oil
  • 1/3 cup KC Masterpiece┬« Kansas City Classic Barbecue Sauce
  • 1/3 cup plain Greek yogurt
  • 2 tbsp pumpkin butter (sub. with pumpkin puree and 1 tsp. of honey if necessary)
  • 2 8 in. tortillas
  • 3 slices muenster cheese
  • 8 turkey slices
  • fresh spinach
  • 1 honeycrisp apple, thinly sliced

Prep

  1. Heat butter or oil in a large non-stick skillet over medium heat.
  1. In a small mixing bowl, combine the barbecue sauce, Greek yogurt and pumpkin butter. Set aside.

Cook

  1. Place one tortilla in the skillet then layer the muenster cheese, turkey slices, spinach, apple slices and shredded white cheddar cheese. Place another tortilla on top. Flip and cook until both sides are golden brown, approx. 3-4 minutes per side. Keep the pan covered as much as possible to ensure everything is heated through and all the cheese is melted.
  2. When the quesadilla is done, remove from pan and slice into triangles. Serve with the pumpkin barbeque sauce on the side for dipping.
