Ingredients

Prep

  1. Arrange the pork in a large resealable plastic container or bag. Set aside 1/2 cup of the Lemon and Cracked Pepper marinade and pour the rest over the meat. Turn so everything is evenly coated, cover/seal, and marinate in the fridge for 30 minutes or longer for more flavor. When the pork is ready, discard any leftover marinade.
  2. Preheat oven to 400ºF.

Cook

  1. Place the pork in a roasting pan and cook for 35 minutes. Make sure the meat reaches an internal temperature of at least 145ºF.
  2. While the meat is cooking, heat up the butter in a large frying pan over medium-high heat. Sauté the onions until translucent, reduce heat, and add the marmalade and honey. Cook until melted, about 2 minutes. Stir in the reserved marinade and simmer until heated through.
  3. When the pork is ready remove from the oven and let the meat rest for 3-5 minutes. Slice the pork and serve with a drizzle of the sauce over top.
