Foil Baked Mango Salmon

Ingredients

Prep

  1. Arrange the salmon in the shallow dish or resealable plastic container. Pour in the Spicy Mango marinade and turn meat until evenly coated. Cover and marinate in the fridge for 30 minutes. When the fish is ready, discard any unused marinade.
  2. Preheat oven to 400ºF.

Cook

  1. Seed and dice the bell pepper, dice the onion, and peel and dice the mango. Rip off 4 sheets of aluminum foil and divide the vegetables evenly between the sheets. Drizzle with fresh marinade and place a salmon filet on top of each. Fold foil to create 4 sealed packets.
  2. Place the foil packets on a baking sheet and cook for 20-25 minutes. Fish should be opaque, flake easily and have an internal temperature of at least 145ºF.
  3. Remove the contents from the packets and serve immediately.
