Sweet & Tangy Pork Chops with Sweet Potatoes, Apples & Onions

Ingredients:

  • 1-1/2 cup cups unfiltered apple juice
  • 1 cup cup KC Masterpiece® Sweet & Tangy Barbecue Sauce
  • 1 clove garlic, pressed
  • 4 thin cut pork loin chops
  • 1 lb. fresh sweet potatoes, scrubbed & cut crosswise into 1/2-inch slices
  • 1 Fuji or Pippin apple, cored and cut crosswise into 1/2-inch slices
  • 1 red onion, peeled and cut crosswise into 1/2-inch slices

Build a charcoal fire with Kingsford® briquets in an outdoor grill and let burn until the coals are almost completely covered with white ash. Meanwhile, pour apple juice into saucepan, simmer over medium heat until it becomes syrupy and is reduced to 1/3 cup. Stir in barbecue sauce and garlic; set aside. Place sweet potato slices into boiling water and cook until tender, but not soft (6 -10 minutes). Drain. Lightly oil the grill grate. Place sweet potato, apple and onion slices on grill; baste with barbecue sauce mixture. Grill until soft, 3-5 minutes, basting occasionally. While vegetables are cooking, sprinkle pork chops with salt and pepper and place on hot grill to sear for 2 minutes. Turn over and baste with barbecue sauce mixture. Cook 2 minutes, turn over and baste with additional sauce. Pork chops are done when firm and instant thermometer reads 150°F. for medium-well. Remove pork chops, sweet potatoes, apples, and onions from grill when cooked to desired doneness. Serve immediately.

Makes 4 servings

NOTE: Recipe was originally designed with fruit and veg. on kabobs, but found that preparation time was considerably reduced by grilling thick slices instead. The apples and onions were cooked more evenly when sliced than when threaded on a skewer.
